Case Study – Sabatier Paring Knife

  • Blade length – 3 inches
  • Material – Stainless steel
  • HRC – 54-56
  • Condition – relatively blunt, some edge damage
  • Whetstone grits used – 400, 1000, 3000, 8000

Paring knife in a fairly poor condition. Bevel required a complete regrind followed by a polishing through the grit progression, finishing on an 8000 grit (abrasive size 3 micron) stone.

Final polished edge – 8000 grit

From unusably blunt and damaged to shaving sharp!
