Case Study – Victorinox Utility Knife

Victorinix utility knife that’s seen regular use in a working kitchen in a highly respected Edinburgh cookery school, and although the blade had lots of scratches the edge was in a good enough condition that it didn’t require a complete bevel regrind.

Victorinox knives are a good budget option and are often used in commercial kitchens due to their cost and their reasonably good heat treatments which offers decent edge retention.

As you can see with the new polished bevel – even a knife in reasonable condition can benefit enormously from being properly sharpened.
